CURATION
For the friggitelli pepper water:
Gently cook the botanicals in salted water at 90°C for 2 hours, ensuring it never reaches a boil. Cool swiftly in water and ice, filter, and preserve the liquid in the cold sanctuary of the refrigerator.For the basil seeds:
Hydrate the basil seeds within the friggitelli water for at least one hour, allowing them to bloom.For the hop cream:
Overcook the pasta in boiling salted water, drain, and blend with the hops until it transforms into a smooth, velvety cream, adding a splash of water if required.For the grapefruit confit:
Cook the grapefruit sous-vide with salt and an abundance of oil, in a steam oven at 70°C for 6 hours. Cut it in half, extract the precious pulp, remove the seeds, and finely chop it by hand with a knife.For the basil oil:
Blanch the basil in small batches in boiling salted water, waiting for the boil to return each time, and immediately shock in ice water. Squeeze thoroughly and blend with the oil at maximum speed. Filter through a fine cloth without squeezing, transfer to a pastry bag, and suspend it overnight: once the watery essence settles at the bottom, discard it, preserving only the pure, aromatic oil.For the finishing touch:
At the moment of serving, cook the fusillone for 9 minutes in boiling salted water and drain. Delicately cut the caper leaves into small pieces.For the plating:
Artfully distribute a spoonful of basil seeds and five points of grapefruit confit. Coat the fusilloni first in the hop cream and then in the Parmigiano, then arrange them upon the plate. Place five pieces of caper leaf upon the grapefruit and crown the dish with the basil oil.
