Combine all ingredients, enriching them with hazelnut brown butter and soy sauce. Season with freshly ground pepper and transfer the mixture into a pastry bag.For the Pasta and the Plin:
Knead the flour, semolina, eggs, and olive oil into a smooth dough, then allow it to rest for one hour. Roll the pasta paper-thin, portion the filling, and pinch the dough with precision to craft the traditional plin.For the Saffron Beurre Blanc:
Reduce the minced shallot with wine and vinegar. Strain the reduction and emulsify it with cold butter. Gently fold in the saffron infusion.For the Coriander Pesto:
Blanch the fresh coriander, shock in ice water, and squeeze dry. Blend with baby spinach, almonds, olive oil, lime, and salt into a vibrant emulsion.For the Cooking:
Gently cook the plin for a single minute in salted boiling water. Toss them with a touch of butter and cooking water, then finish them directly in the beurre blanc to glaze them in a silken sheen.For the Plating:
