The spark was ignited in the Langhe, in Dogliani, where Fabrizio began assisting a friend who owned a small, artisanal pasta workshop. From serving as a "helping hand," he became an enduring presence, and eventually, the bearer of responsibility: his passion assumed form, and Fabrizio acquired the enterprise. When the distance to Milan began to weigh upon him, he chose a tangible, intermediate step: a warehouse in Novara, his native land. From there, with two vans, he weaved a geography of deliveries and alliances spanning Milan, Lake Maggiore, and Lake Orta, supplying restaurants and fine gastronomies. Not merely fresh pasta: but also culinary counsel, epicurean suggestions, and the very architecture of menus — as though every kitchen required an exacting measure, a beautifully executed seam.

The atelier officially debuted in 2015, during the height of the Expo season, at the Mercato Metropolitano on the Navigli. Yet the true "narrative seat," that which bestowed a recognizable and almost theatrical urban dimension upon the project, arrived in November 2021, in the immediate wake of the pandemic: Fabrizio, urged by the persistent encouragement of a dear restaurateur friend from the Seven group, agreed to take over a fruit and vegetable stall in the evocative Mercato del Suffragio.

The leap from raw pasta to the culinary plate — from the workshop to the table — was also shaped by a decisive, almost providential encounter with the guardian angel of his craft: chef Giacomo Gallina (formerly at the helm of Dolce & Gabbana’s Gold), who out of pure friendship stood by Fabrizio’s side for two months, imparting the secrets of preparations, sauces, and a concrete, traditional cuisine free of superfluous frills: the very backbone that sustains the identity of the stall to this day.
