CURATION
For the rabbit jus:
Roast the rabbit bones in the oven with the vegetables. Transfer them to a deep saucepan with ice and simmer gently for 12 hours until a smooth, beautifully bound elixir is achieved.For the rabbit ragù:
Hand-mince the rabbit loin with a knife and sear it in a hot pan with olive oil and the aromatic brunoise. Season with salt, pepper, minced garlic, bay leaf, and/or fennel seeds. Deglaze the pan with white wine, allowing it to reduce. Add the rabbit jus and let the flavors meld and cook.For cooking the pasta:
Boil the pasta in abundant, salted water. Drain it three minutes before it reaches al dente. Complete its journey by tossing it gently in the pan with the rabbit ragù to absorb its essence.For the prawns and honey mustard:
In a small vessel, dress the freshly shelled prawns with extra virgin olive oil, salt, and lemon zest. Whisk the mustard together with the honey into a harmonious emulsion.For the final presentation:
In a shallow bowl, artfully arrange the fusilloni. Crown them with the dressed prawns and complete the composition with a drizzle of honey mustard sauce.
