CURATION
For the dough:
Combine the ingredients within a planetary mixer, kneading until you achieve a soft, harmonious dough. Let it rest, enveloped in cling film, in the cool sanctuary of the refrigerator.For the filling:
Mingle the ingredients and transfer the velvet cream into a pastry bag. Allow it to rest for at least ten minutes in the chill of the refrigerator.
For the cat's tongue biscuits:
Combine the dry ingredients, integrate the butter, and lastly, fold in the egg white. Stir until a smooth, graceful mixture forms, then let it rest. Spread a whisper-thin layer with a spatula onto parchment paper and bake at 160°C for 7 minutes.For the ravioli:
Roll the dough to a delicate thinness and cut it with a round cutter of 5 cm. Place a gentle dollop of filling in the center of the dough sheet. Fold into a half-moon, moistening one of the edges to seal the precious filling secure, and join the tips. Blister the ravioli in lightly sweetened water (add a small cup of espresso, if you wish, to enrich the bath) for 2 minutes, drain, and allow to cool.For the final composition of the dish:
